1. Remove any skin on the chicken and cut into bite size pieces.
2. finely chop the onions.
3. Blend the tomatoes.
4. Finely chop the chillies do not remove the seeds.
5. Crush the garlic.
6. Finely chop the ginger.
7. Heat the oil in a large non stick pan add the cloves and cardamoms and wait till they sizzle.
8. Add the onions and fry untill dark brown, the onions must be dark for the perfect result.
9. Now add the green chillis,ginger,garlic and cook for 30seconds.
10. Next add the red chilli powder,cumin,coriander,turmeric add salt and stir frequently.
11. Add the chicken and 50ml of water and mix well for 2-3 minutes.
12. Finally add the nutmeg and tomatoes cook and cover for a further 20mins on a medium heat or untill chicken is tender.
13. When ready to serve sprinkle with garam masala and fresh chopped coriander.
